The debate over health care reform has run smack into a brick wall of economic reality. There's just not enough money to pay for all the disease in America, it seems, and now lawmakers are desperately searching for new sources that might bridge the financial gaps. Their latest scheme involves taxing sodas with a three-cent tax to raise an extra $24 billion over the next four years.

At first, taxing soda might seem like a good idea. Sodas, after all, promote diabetes, obesity, bone loss and many other costly health conditions. It only stands to reason that people who drink soda should pay a little more towards a national health care plan.

But there are problems with this idea of a soda tax. For starters, it's a highly regressive tax that ultimately gets paid mostly by low-income, low-education people (the kind of people who drink a lot of soda). It's a tax, in other words, on those who can least afford it.

Another problem with such a tax is that if the U.S. government is going to use taxes to modify consumer behavior, it would seem prudent to first end the government subsidies on sugar that have existed since World War II. Why are we still using taxpayer dollars to lower the price of sugar when refined white sugar contributes so much to our nation's health problems?

Then there's the question of where the money will go. Even if you slap a five-cent tax on every can of soda, does that money actually end up going towards improved health care, or is it just lost in the morass of bureaucratic incompetude that wanders the halls of Washington these days?

Case in point: The government settlement with Big Tobacco. All that tobacco money that was supposed to go to "improving health care" across America has actually ended up in the general budgets of most states, where it gets wasted on a thousand different things that have nothing to do with health care. A soda tax would likely end up being lost in the system in much the same way.

A better solution for influencing consumer behavior

Slapping new "sin taxes" on consumer products as a way to shape consumer behavior while raising money is a seductively attractive idea if you're a bureaucrat with an itchy trigger finger. It seems (at first, at least) economically and morally sound: Make the people who cause the problem pay more for fixing it. It all seems so simple: Let cigarette taxes pay for health care. Let soda taxes help fight obesity. Let alcohol taxes pay for alcohol addiction recovery centers. But in the real world, it never quite works that way: Money gets stolen away for other uses, rarely going to the intended beneficiary. Meanwhile, the taxes end up hurting those consumers who can least afford it.

A far better option is educating consumers about the harm these products cause. Put large, unambiguous warnings on cigarettes like, "SMOKING CAUSES CANCER" along with a horrifying picture of a diseased lung. On soda cans, you could require warnings like, "DRINKING SODA CAUSES KIDNEY STONES" along with a picture of a short, sweaty man holding his junk and screaming in pain.

You get the idea. Why waste all that time and effort collecting and distributing a five-cent soda tax when you can just use pictures and warning labels to influence consumer behavior?

Of course, using honest labels on harmful products doesn't raise money for bureaucrats to ferret away in their favorite pork projects, but it does accomplish something much more important: It reduces long-term health care costs by dissuading people from consuming harmful products.

Sure, it doesn't stop every ignorant teen from slamming colas while he becomes obese and diabetic, but it does have a positive influence on many. The sad truth is that most people who drink soda have no idea the phosphoric acid causes bone mineral loss and kidney stones. They have no clue that high-fructose corn syrup promotes diabetes and obesity. They just don't know about the harmful effects of drinking highly acidic liquid sugar beverages, and that's part of the reason why they keep drinking them.

In my opinion, large health warnings should be required on all sodas and junk food products. And they should be blunt: Soda causes diabetes. Donuts cause obesity and heart disease. Hot dogs cause cancer. The list goes on...

Such a proposal would horrify the corporate giants in the food and beverage industries, of course. Their sales depend on consumers staying ignorant about the ravaging health effects of their products. Requiring their labels to tell the truth would devastate their sales and profits. The processed food industry would suffer huge economic losses. So would the sick care industry as fewer people suffer degenerative disease. Lots of jobs would be lost as people avoided disease-promoting foods.

And that should be the ultimate goal: A huge downsizing of the junk food and sick care industries. The smaller they are, the better off the people are. Ultimately, we should strive to destroy the sick care industry altogether. The day Big Pharma's top corporations declare bankruptcy due to a lack of sales is the day we've achieved something meaningful for the health of our nation. And we're not going to get there by taxing sodas without telling people the truth about how sodas destroy their health.

The adrenals are two small glands, each weighing 3 to 5 grams, that are located above the kidneys. The adrenals have one of the highest rates of blood flow per gram of tissue, and the highest content of Vitamin C per gram of any tissue in the body.

Each adrenal gland is composed of two separate functional entities. The outer zone, or cortex, accounts for 80% to 90% of the gland, and secretes adrenal steroids (Cortisol, DHEA(S) and Aldosterone). The inner zone, or medulla, comprises 10% to 20% of the gland, and secretes the catecholamines adrenaline and nor-adrenaline. Cortisol, DHEA and adrenaline are the three main adrenal stress hormones.

The Adrenal Rhythm & Its Importance
The human adrenal gland does not secrete its steroid hormones at a constant level throughout the day. The hormones are actually released in a cycle with the highest value in the morning and the lowest value at night. This is easily understood by looking at Figure 1. This 24-hour cycle is called the circadian rhythm. An abnormal adrenal rhythm can influence many functions of the body, some of which are listed below.



1. Energy production
Abnormal adrenal function can alter the ability of cells to produce energy for activities of daily living. People who have a hard time rising in the morning, or who suffer with a low energy level during the day, often have abnormal adrenal rhythms and poor blood sugar regulation.

The maintenance of a stable blood sugar level depends on food choice, lifestyle, adrenal function and insulin activity. This panel measures stress hormones and insulin, to help ferret out causes of fatigue, cravings and obesity.

2. Muscle & joint function
Abnormal adrenal rhythms are known to compromise tissue healing. Reduced tissue repair and increased tissue breakdown can lead to muscle and joint breakdown with chronic pain.

If the night cortisol level is elevated and the morning level is too high, our bones do not rebuild well, and we are more prone to the osteoporotic process. Stress is the enemy of the bones. This immune system trafficking follows the cortisol cycle. So, if the cycle is disrupted, especially at night, then the immune system is adversely affected.
Short and long-term stress is known to suppress the immune response on the surfaces of our body as in lungs, throat, urinary and intestinal tract. With the reduction in the surface antibody (called secretory IgA), the resistance to infection is reduced and allergic reactions are believed to increase.

5. Sleep quality
The ability to enter REM sleep cycles, i.e. regenerative sleep, is interrupted by high cortisol values at night and in the morning. Chronic lack of REM sleep can reduce the mental vitality and vigor of a person and induce depression.

6. Skin regeneration
Human skin regenerates mostly during the night. With higher night cortisol values, less skin regeneration takes place. So, a normal cortisol rhythm is essential for optimal skin health (See Figure 2).



7. Thyroid function
The level of Cortisol at the cell level controls thyroid hormone production. Quite often, hypothyroid symptoms such as fatigue and low body temperature are due to an adrenal maladaptation.

8. Grain intolerance & stress
About 12-18% of the U.S. population suffers from a genetic intol- erance to grain. Specifically, a high incidence occurs in Celtic, Germanic, and Nordic derivation. The gut becomes inflamed within 30 minutes after consuming the grains and this can lead to an adrenal stress response, increased cortisol and reduced DHEA.

How Healthy is Dairy?

There is no human requirement for milk from a cow," says Suzanne Havala, RD, author of the American Dietetic Association's "Position Paper on Vegetarian Diets" and several books on nutrition. "The use of milk and its products in our country is strictly a cultural tradition," she notes. "There are millions of people around the world who never consume cow's milk and are none the worse for it."

While doctors recommend increasing the intake of calcium in order to prevent ostreoporosis and maintain good health, most calcium supplements are insoluble in the distal small intestine where absorption of calcium occurs. In fact calcium, like all minerals and vitamins have a selection of ideal partners to enable optimal absorption and utilisation by the human body. Silica is one of these critical partners.

Vitamin D also plays a critical role in maintaining bone health. When blood levels of calcium begin to drop, the body responds in several ways. It promotes the conversion of vitamin D into its active form, which then travels to the intestines (to encourage greater calcium absorption into the blood) and to the kidneys (to minimize calcium loss in the urine).

For bone health, an adequate intake of vitamin D is no less important than calcium. Vitamin D is found in milk and vitamin supplements, and it can be made by the skin when it is exposed to sunlight in the summertime.

Vitamin K, which is found mainly in green, leafy vegetables, likely plays one or more important roles in calcium regulation and bone formation.

Calcium is calcium, however, whether it's from broccoli or cottage cheese. "There's no best source of calcium," explains Robert Heaney, a professor with the Osteoporosis Research Center at Creighton University School of Medicine. "The sheer quantity of calcium in dairy products certainly makes them attractive sources, but they have no monopoly on calcium. There's no reason in the world why you couldn't get an adequate intake from a vegetable source."

Indeed, researchers have found that nations with the greatest calcium intake have the highest rates of osteoporosis and hip fracture, and that there are relatively few fractures among populations where calcium levels are not so high. After studying bone fracture rates worldwide, researcher JA Kanis concluded that the differences in fracture rates, "cannot be accounted for by differences in dietary intake of calcium but may relate more to physical activity [which promotes strong bones]."

Another worrying piece of information according to gynecologist Christiane Northrup, MD, author of "Women's Bodies Women's Wisdom", other health problems associated with the consumption of dairy foods include benign breast conditions, recurrent vaginitis, acne, menstrual cramps, fibroids, chronic intestinal upset and increased pain from endometriosis. These health problems could be occurring due to some farmers artificially increasing a growth hormone in cows in an attempt to increase yield.

Milk can also be associated with the conditions described below.
Allergies: Milk is the most common cause of food allergy. A recent study found that one way to reduce the number of allergies in infants is for the breastfeeding mother to avoid consuming, or make very limited use of cow's milk.

Anemia: Overreliance on milk in children can lead to anemia, as milk is very low in iron, and drinking large quantities of it can crowd iron-rich foods from the diet. In young infants, protein from cow's milk can cause intestinal bleeding, another possible cause of anemia.

Colic: Sensitivity to cow's milk can cause colic, a digestive ailment in infants. Colic can cause problems even in infants who aren't drinking cow's milk but whose mothers are.
Fermented dairy products are a much better option compared to straight dairy products such as fermented milks and yoghurts containing 'probiotic' cultures such as lactobacilli and bifidobacteria. These are currently among the best known examples of functional foods. They are simpler for our body to absorb due to the fact that they are already partially digested due to the fermentation process.
